Super easy & fast!

PREP: Steam and mash a sweet potato. Rinse and drain a can of black beans. Grate some cheese.

Heat a little olive oil in a pan and add a tortilla, layer on some sweet potato, beans and some grated cheese.

Top with another tortilla. Cook until golden and flip. Remove from pan when second side is cooked and cheese is melted. Serve with salsa, avocado & sour cream.
