Detox White Bean Soup

Cook 1 chopped onion, 1 sliced celery stalk and a clove of pressed garlic in 1 tablespoon olive oil.

Cook for a few minutes, then add a large diced carrot, a couple of peeled and diced potatoes and a teaspoon or so of thyme, parsley & bay (or whatever dried herbs you like).

Add 2 quarts of vegetable stock. Bring up to a boil.

Add a large tin of diced tomatoes & a can of rinsed and drained white beans.

Return to a boil and add a bunch of chopped kale.

Give a good stir, reduce heat to medium low and cook until everything is done, about 30 minutes or so.

Top with some grated parmesan if you like. ENJOY!!
