
This easy vegetarian recipe will be sure to have you wanting more. Chickpea and spinach curry is healthy, delicious and quick to make!
Made with sweet potato and various spices, creamy coconut and tomato sauce.
Cook 1 large chopped onion, 2 cloves pressed garlic and 1” grated ginger in about 1 tbsp. of coconut oil. Add 1 medium diced sweet potato and cook until soft, about 10 minutes.

Sprinkle in about 1 tsp each of curry powder, turmeric, coriander, cumin; add chili paste to taste.

Give a good stir, and add 1 can coconut milk, 15 oz. chickpeas, a package thawed and drained spinach (or 4 big handfuls chopped fresh) and 15 oz. diced tomatoes.



Let flavours blend for about 15 minutes and serve. We like it with some brown rice.
