“From Sue’s Kitchen”
One of our favorite recipes from “Sue’s Kitchen”. Great tasting BBQ ribs….without the ribs! Enjoy with a nice cold beer!
Seitan ribs – serves 4
Mix 1 cup vital wheat gluten flour with 2 tbsp nutritional yeast, 1 tbsp paprika, 2 tsp onion powder & 1 tsp garlic powder and a little pepper.

In another bowl mix ¾ cups broth, 2 tbsp peanut butter, a few drops liquid smoke and 1 tbsp soy sauce. Add this to the dry ingredients and mix well.



Knead the dough for a few minutes, then pat into a greased 8×8” dish. With a knife, score the seitan down the middle of the dish. Give it a quarter turn and score into 7 or 8 strips.


Bake 25 minutes, then brush top with about ½ cup of your favorite barbecue sauce.


Carefully flip the first ½ along score line, then the second. Brush with another ½ cup of sauce and bake another 20 minutes.

Remove from oven and separate along score lines. Serve with additional sauce, sweet potato fries & salad if you like.
