“Sue’s Awesome Lentil Loaf”

This awesome vegetarian lentil loaf is a healthy and delicious choice. It takes little time to make, with simple ingredients you can usually find in the house. Serve with rice and your favourite vegetable. Serves 4

Toast 1 cup of breadcrumbs & 1 cup of chopped walnuts

Make a flax egg (Mix 1 TBSP ground flaxseed & 2 TBSP of water)

Chop and cook, 2 onions, 2 minced garlic cloves, 2 celery stalks & 1 large carrot in olive oil until soft

Add thyme, sage, oregano, 1 tsp salt, 1 tsp pepper, 1 190z can of lentils, 1/3 cup tomato paste & 1/4 cup raisins

Pack into a 9 x 5 loaf pan and top with ketchup

Bake for 1 hr @ 400, let rest 30 mins
